ASPARAGUS STIR-FRY
1 Tbsp. olive oil 1 leek, white part only ½ tsp. dried basil ¼ tsp. salt Pinch of pepper 3 c. sliced shiitake mushroom caps 2 c. sliced button mushrooms 2 cloves garlic, minced 1 lb. asparagus, cut in 1 ½ inch lengths In a wok or skillet, heat oil over high heat; stir-fry leek, basil, salt and pepper for 2 min. Add shiitake, button mushrooms and garlic; stir-fry until liquid is released, 2 min. Add asparagus; stir-fry until tender-crisp, 4 min. |
