Meatloaf ~ Low Carb

Default Low-Carb Meatloaf Recipe

1 1/4 lbs lean ground beef
1 1/4 lbs ground pork
2 eggs
2 c. finely grated fresh cauliflower
1 small onion, minced
Salt & pepper, to taste

Place cauliflower pieces in a food processor and chop fine, add onion for the last few pulses. Mix all ingredients together in a large bowl.

Shape into a large loaf in a 13×9 pan, spread any no-sugar topping (ketchup, hoisin sauce, etc). Bake at 350 for approximately 1 hour, 20 min.
