ROASTED BROCCOLI AND RED PEPPER
6 c. broccoli florets (about one large bunch) 1 sweet red pepper, cut in chunks 2 cloves garlic, minced 2 Tbsp. olive oil ½ tsp. salt ¼ tsp. pepper Pinch of cayenne pepper In a large bowl, toss broccoli, red pepper, garlic, oil, salt, pepper and cayenne pepper. Spread on a foil-lined rimmed baking sheet. Roast in 450 degree oven until broccoli is tender crisp, 10 – 15 minutes. |
