Roasted Vegetables

This recipe is easy and relatively quick.


  • IP allowed vegetables (I use fresh asparagus spears, chopped bell pepper or onion, but this works with any veggie really)
  • Olive Oil (to drizzle over the veggies)
  • Season-all or Mrs. Dash Table mix (sprinkle for flavor)


Spray the bottom of a roasting pan with nonstick cooking spray. I personally use Pam Olive Oil spray. Place the vegetables in a single layer deep across the pan, then drizzle with olive oil and sprinkle with seasonings. Place in a pre-heated oven of 500&deg on the top rack, and roast for 10-15 minutes. Vegetables should still be crisp but not raw tasting.
